Fishing!
I tend to have more interest in a videogame if the fishing skill is included. It is not a must but personally I think it gives more value to the game as it often brings more content to the core gameplay. Here are some screenshots to enjoy, taken while gaming on a Samsung Odyssey G9 Neo that I purchased a year ago.

Valheim
Absolutely beautiful fishing gameplay. You can choose to stand in the coast or on a huge rock. If the nature is not offering you enough spots, build your custom dock or sail a boat - while fishing!
Unfortunately, there are some horrors that you might find while doing fishy activities. As soon as you reach the Ocean terrain for pufferfish etc, this floating snake-ish thing will find you. And scream like hell. A pro tip to fish here is to keep your boat ready to sail tailwind
Minecraft
I think Minecraft had the most exciting fishing gameplay for a long time, until late 2020 updates. Fishing used to be a skill to master with patience, but nowadays it feels just too easy and cheap. I am not saying it is not nice to recieve all the random things from the sea like saddles and enchanting books, but with just a common fishing rod you get fish too often.
VR Minecraft
VR Minecraft is still lots of fun, despite the lazy-updates. I mean, fishing overall in VR is fantastic and the actions you make with your VR controllers makes it feel so much better than traditional click-to-fish fishing. Although that is an option to use in VR, too..

Fortnite
Fortnite - has probably the most dangerous fishing activity. I have not found yet a good reason to fish in this game. You are most likely getting yourself killed, and the non- exciting loots will not make it any better. I think there might be something hiding in this game which requires digging even deeper, so if you see a fisherman - do not shoot!
Old School RuneScape
In short, OSRS, has one of the most unique fishing methods, not to mention all the different fish you find in Gielinor. After fishing (and cooking) 200,000 monkfish and quickly cashing it in (to actually cause an economy crash) in the Grand Exchange, I think the game no longer wants me to stand on any fishing platform. The clue scroll running combined with this skill makes it a rewarding habit to enjoy.
RuneScape 3
RuneScape 3, it is soft and melodic. Just like OSRS, this game has lots of fish to offer. The fish found in this game is not as precious due to Evolution of Combat, so I think I will give a pass to any further fishing.
Skyrim: Special Edition

It is all good until a dragon engages you. During daylight as a vampire this is terrible, if the dragon happens to be a blazing one. And if the dragons do not bother you, the Dawnguard will. There is just some common fish to be found, althought the beautiful landscapes are in favour of this activity. One of the most efficient ways to fish WARGNING: PLOT TWIST is to give the sea living some fush-ro-da and watch them float. Might be a little barbaric but it does the job.
Unturned
Unturned, fishing here requires the least amount of input. When the bait goes under water, you just left click and the fish gets into your bag. You still have to pay attention, to both fish and zombies!
Stardew Valley
I have found this game as one of the most relaxing one. Watching a movie while holding a controller - just waiting it to vibrate and the actual challenge begins. Night is the only con in the game as when you run out of daylight, you might find your character sleeping and some wanderer clears your pockets.
The Forest
Fishing in the small ponds feels like you are smugling someones aquarium, the fish are so shiny and clean! There is like 5 or 6 fish found at each pond so there will not be any overstock as the ponds are not next to each other. I hope one day The Forest recieves an update contaning a fishing rod - as harpooing is currently the only way to catch fish. Animal traps work too, but limiting the fishing activity just to harpoons is somewhat lame. Leaves me just one question, why can you not swim with a harpoon..
Dont Starve
So far it has been just what to expect from this game. One type of a fish from ponds. I mean, you would not want to gather too many of these as no matter how hard you try, this game will eventually kill you.
World of Warcraft
Mostly focusing on World of Warcraft: Classic, fishing here is rewarding but requires you to pay attention. Random mobs and players will piss you off. The loot table is somewhat similiar to Minecrafts, and I really like that.
